Pesto Cream

  • 2 cups half & half or light whipping cream
  • 1-1/2 tablespoons butter
  • 3 tablespoons flour
  • 3/4 basil pesto
  • 1/2 teaspoon salt

Place half & half in a pan and heat until a thin skin forms on top. Melt 1-1/2 tablespoons of butter in another pan, add flour, whisk, and cook for 2 minutes. Pour cream into the flour paste and whisk until slightly thickened and smooth. Stir in pesto and salt and cook at a low simmer for just another minute.
