Shrimp and Grits

  • 1 pound fresh shrimp, peeled
  • 6 slices bacon
  • 2 cups sliced mushrooms
  • 1 cup sliced scallions
  • 1 large clove of garlic, crushed
  • 4 teaspoons lemon juice
  • Peanut oil
  • Hot sauce
  • Chopped parsley
  • Salt
  • Pepper
  • Grits

Rinse the shrimp and pat dry. Set aside.

Dice the bacon and cook in a large skillet until browned on the edges. Drain and set aside.

Add enough oil to the bacon fat in the skillet to make a thick layer. Heat on medium-high until fat is hot. Add shrimp. Stir and add mushrooms when the shrimp starts to color. Add scallions, bacon and garlic. Season to taste with lemon, hot sauce, parsley, salt, and pepper. Spoon shrimp over grits and serve immediately.
