Applesauce Raisin Muffins

  • 1-1/3 cup sugar
  • 2-1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1/2 cups raisins
  • 1 cup buttermilk
  • 2/3 cup oil
  • 1 large egg
  • 1 cup applesauce
  • 1/2 cup chopped pecans (optional)

Preheat oven to 375°F. Combine dry ingredients, raisins, and pecans. In another bowl, mix buttermilk, egg, and oil. Fold this mixture into the dry ingredients and gently stir in the applesauce. Mix until all ingredients are wet. Spray muffin tins with oil or line with baking cups. Fill 1/4 to 1/2 full. Bake until firm to touch (about 20-25 minutes.) Makes 24 muffins.
