Cinnamon Muffins

  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoons baking powder
  • 2 eggs
  • 1/2 cup canola oil
  • 1 cup milk
  • 1/2 cup raisins
  • 1 heaping tablespoon cinnamon

Preheat oven to 350°F. Mix egg, milk, oil together and add to dry ingredients (except raisins) by folding in; do not beat or muffins will be tough. Some lumps will remain. Stir in raisins. Spray muffin tins with oil or line with baking cups. Fill 1/2 to 1/4 full. Bake until firm to touch (about 25 minutes.) Makes 12 regular sized muffins.
