Blueberry Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 egg
  • 1/4 cup canola oil
  • 1/4 cup milk
  • 7 oz. blueberries
  • 1/4 teaspoon nutmeg

Heat oven to 350°F. Beat egg, oil and milk together and add to dry ingredients. Fold into dry ingredients; do not beat or the muffins will be tough. Some lumps will remain.

Spray muffin tins with oil line with baking cups. Fill 1/4 to 1/2 full. Bake until firm to touch (about 25 minutes.) Makes 12 regular sized muffins.
