Aioli Sauce

  • 4 garlic cloves, peeled, chopped fine
  • 2 egg yolks
  • 1/8 teaspoon sea salt
  • 1 cup virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice

Use a mortar and pestle to mash/blend the garlic and salt. Combine with the egg yolks, mustard, and lemon juice in a mixing bowl. Slowly drizzle in olive oil while constantly mixing with a wire wisk or fork. When it is all blended and smooth, enjoy! Re-season with salt and/or lemon juice, or even cracked black pepper, if desired.
