Creamed Chipped Beef on Toast

  • 5 ounce jar of Dried Beef, sliced into thin strips
  • 3 or 4 cups milk (for added richness, substitute light or heavy cream for some of the milk)
  • 4 tablespoons flour
  • 4 ounces butter
  • Kosher salt and freshly ground black pepper to taste
  • Bread for toasting

In a skillet, melt half the butter untill bubbling but not brown.

Add the beef and crisp it up a bit.

Add flour to make a sort of roux, turn the heat down, and cook out for a few minutes.

Add your milk, raise the heat and bring to a boil, then reduce to a simmer. Adjust the consistency/thickness with more milk if too thick. Season. Incorporate the remaining butter for added richness. Season to taste with salt and plenty of pepper.

Spoon over toasted bread and enjoy.
