Faux Bruschetta

  • 1 Loaf of French Bread, sliced into 1" or so slices
  • 4 Roma Tomatoes - sliced into thin rounds
  • 1 Bag of shredded Mozzarella
  • 1 onion, sliced very thinly (optional)
  • Olive oil
  • Fresh ground black pepper
  • Dried or fresh chopped oregano

Coat one side of sliced bread with olive oil by pouring the olive oil onto a plate and dipping the bread. Place bread on a cookie sheet oil side up. Top each piece with sliced tomatoes, onion and a sprinkle of black pepper, then cover with shredded cheese and sprinkle with oregano. Cook under the broiler for 5 minutes or until cheese melts and just begins to brown (watch closely; it burns very quickly.)
