Chicken & Rice Skillet

  • 1 chicken breast
  • 2 cups rice
  • 2 tablespoons oil
  • A good handful of sliced veggies
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • Pepper to taste
  • Dash of Creole seasoning
  • Water
Single skillet method:

Put rice into skillet, add enough water to cover rice, turn stove on medium to medium high, stirring occasionally.

Cut chicken into bite-sized pieces.

Cut veggies into bite-sized pieces.

As the rice cooks, the water will evaporate - you'll need to add more periodically.

When rice is about halfway done add the chicken, veggies and oil.

Keep stirring occasionally.

Add cumin, salt, pepper and Creole seasoning.

When the chicken is thoroughly cooked, add about a 1/2 cup of water.

Cook until about 80% of the water is cooked out.

Multiple Pot method:

Put chicken in a pot of water to boil.

Start cooking rice.

Cut veggies into bite-sized pieces.

Take the chicken out of the water and cut it into bite-sized pieces.

When rice is done, put everything (seasonings included) in a skillet.

Add about 1/2 cup of water and wait for about 80% of the water to cook out.
