Vegetable Stir Fry

Get some sticky white rice going, one cup dry for 2 people. Keep an eye on it while you do the rest.

Chop up a few cups of whatever veggies you've got: squashes, zucchini, carrots, beans, peppers, whatever!

Heat some peanut oil in a very hot wok or pan. Put a chopped or diced yellow onion in and cook first if you've got it. Keep stirring.

Stir fry those veggies. Hope you actually chopped them earlier! Add several cloves of chopped or whole garlic after the veggies if you like garlic.

Sprinkle with ginger powder. Toss in some peanuts, cashews, or almonds if you're feeling it. Keep stirring things around.

After several minutes of fry, bigger stuff and greens might like a dash of water and the lid for a minute or two. Normal veggies don't need this step. Your call.

Mix up the sauce on the side or before: a cup of water/broth, a spoon of cornstarch (stir to remove clumps), several dashes of soy or fish sauce, then some red pepper flakes and any other favorite flavorings on hand. You want Thai? Try adding a big glob of peanut butter in the mix.

Dump it in with your cooking veggies, lower heat a bit, and stir around until sauce thickens up. Just a minute or two.

Rice should be done by now.
