Fresh Sardines with Herbs

  • 900g (2 pounds) fresh sardines, cleaned
  • 60ml (4 Tablespoons) fresh mixed herbs (mint, parsley, sage, etc.), chopped
  • 120ml (8 Tablespoons) lemon juice
  • 300ml (1/2 pint) olive or sunflower oil
  • 2 medium onions, skinned and finely sliced
  • Rind of 2 lemons, grated
  • Lemon wedges for garnish
  • Salt and pepper

Wash the sardines well. Mix 45 ml (3 Tablespoons) herbs with the lemon rind, juice, oil, onions, and seasoning.

Grill the sardines for 5 to 7 minutes per side, basting with the herb dressing. Serve immediately or leave in the dressing to cool completely.

Sprinkle with the reserved herbs and garnish with lemon wedges before serving.
