Spicy Beanburgers

  • 1 small onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 chile, chopped
  • 150 grams fresh spinach
  • 400 gram can mixed beans (cannellini, kidney, borlotti, butter etc.)
  • 50 grams fresh bread crumbs
  • 1 teaspoon ground cumin
  • 1 Tablespoon chopped coriander

Wilt the spinach in a pan with a tablespoon of water and squeeze out as much moisture as possible.

Cook the onion, garic and chile in a little oil for 5 minutes until softened but not browned.

Place everything except the onion mixture into a food processor and blend to a fairly rough paste. Add the onion mixture and process for a few seconds.

Form into 4 to 6 burger patties, brush with oil, and grill.
