Split Pea Soup

  • 4 - 5 strips of bacon, chopped
  • 1 yellow onion, diced
  • 2 potatoes, diced and peeled
  • 1 cup milk
  • 1 package dried split peas
  • A dash of Louisiana hot sauce (optional)
  • Salt and pepper
  • Water

Sauté bacon, onion, and potatoes. Deglaze a pan with chicken stock. Add milk and enough water to make 6 cups of total liquid. Add split peas and simmer until smooth. Blend to a creamy texture in a blender or food processor. Adjust taste with salt, pepper, and hot sauce.
