Pico de Gallo

  • 4 - 5 Roma tomatoes, seeded and finely diced
  • 1/2 small red onion, fimely diced
  • 1 jalepeno pepper, split, seeded, ribbed, and finely diced
  • 1 lime or lemon, juiced
  • Cilantro, finely chopped
  • A dash of salt

Combine all ingredients in a bowl. Refrigerate for one hour before serving to allow the flavors to mingle.
