Baked Brie in Puff Pastry

  • wheel of brie cheese
  • small amount of apricot preserves
  • sliced almonds
  • frozen puff pastry sheets, thawed
  • 1 egg
  • 2 Tablespoons milk

Remove pastry sheets from freezer and allow to thaw.

Beat egg in a small bowl and mix well with milk.

Spread a layer of perserves over the cheese and top with sliced almonds. Fold the pastry dough around the cheese and tuck the edges underneath it. Place on a cookie sheet and brush with the egg mixture. Freeze for several hours to prevent the cheese from oozing when it is placed in a hot oven.

Preheat oven to between 375° and 400°F. Bake for 10 minutes or until the dough is golden brown.

Transfer to serving platter with a spatula and serve with French bread, crackers, grapes, and/or wedges of apple and pear.
