Rice Pudding

  • 3-1/2 cups milk
  • 1/2 cup sugar, divided use
  • 1 cinnamon stick
  • 1/2 cup long grain rice
  • 2 egg yolks
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 4 green cardamon pods
  • freshly grated nutmeg
  • 1/2 cup golden raisins

Heat the milk, 1/4 cup sugar, cinnamon, and cardamon pods just to a boil. Stir in the rice and reduce heat to low.

Cover and simmer for 40 minutes (rice needs to be a little beyond done). Add golden raisins for the last ten minutes.

Whisk together yolks, cream, 1/4 cup remaining sugar, and vanilla extract in a small bowl.

Stir this mixture into the simmering rice, bring back to a strong simmer, and cook, constantly stirring for two minutes.

Chill. Remove the whole spices. Grate fresh nutmeg over the top.
