English Scones

  • 1/2 lb. self-raising flour
  • 1/3 teaspoon salt
  • 2 oz butter
  • 1 oz caster sugar
  • 1/4 pint milk

Sift flour and salt into bowl.

Rub in butter finely.

Add sugar and mix gently.

Add milk all at once. Mix to soft, but not sticky, dough.

Turn out onto a lightly floured surface. Knead quickly until smooth.

Roll out to about 1/2 inch thickness. Cut 16-18 rounds with a 2 inch fluted cookie cutter.

Transfer to buttered baking tray. Brush tops with milk.

Bake towards top of hot oven (450°F) for 7 to 10 minutes. or until well risen and golden.

Cool on wire rack and eat whilst still slightly warm.

Contributor's note:You can also add 1-2 oz sultanas / currants / chopped dates etc with the sugar.
