Beef Stew

Serves 12
  • 2 lbs stew beef
  • 1 kielbasa, roughly sliced
  • 1 large can of crushed or diced tomatoes
  • 1 can ranch style beans
  • 2 onions, halved and quartered
  • 2 or 3 potatoes, peeled and cut roughly
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can hominy
  • 1 can corn
  • 1 can peas
  • 1 can green beans
  • 1 can of other vegetables as desired
  • salt, pepper, and oregano to taste

Combine all ingredients, including the liquid from the canned vegetables, in a large pot. Sprinkle enough oregano on top to coarsely cover the stew and stir. Cover the pot with a tight fitting lid or foil and cook at 200° for eight hours.

Contributor's note: Something you don't like? Leave it out. Something essential missing? Throw it in! Serve with crusty French bread. Freeze uneaten portions in small containers.
